Ingredients

1 chicken (1.5 kg)
3 ripe bananas
A pot of apricot jam
3 garlic cloves
1/2 glass port wine
3 tbsp curry powder


pepper, salt
1/4 tsp ginger (fresh shredded)
1/4 tsp cinnamon
6-7 cloves
1 tbsp butter

Preparation
Melt the butter in a pan. Saute the curry powder briefly. Mix the crushed garlic cloves, half of the apricot jam, 1 tsp salt, the rest of the spices and seasoning, the sauteed curry powder and the port, and blend thoroughly. Rub the marinade into the chicken and stuff it with the remaining jam. Set it aside for 2 hours so the spices can draw properly.
Then stuff the chicken with thick banana slices, cover and roast in the oven at 180 ° for c. one and a half hours. Finally cook it uncovered for half an hour to let it get crisp. Pour some of the marinade on it every now and then to prevent it from drying out.
