A pound of stewed fruit: dried plums, apple slices, Hutzel pears and a couple of dried cherries are heated in a pot with warm water overnight to allow the pears and apple slices to stew. Take a good pound of smoked fatty pork and boil it slowly just covered with water.


When it’s half cooked, add the pears, and half an hour later the rest of the fruit with the water they’ve been stewing in. The fruit and meat should cook together. The stock can be thickened slightly with some potato flour or a roux. Serve with potato dumplings.
